Jeff's Tasty Town: South of the Border Steak Fajitas Print E-mail

I'd like to start off and tell you this is the best meal I've had since I started this challenge. Simply put, it was awesome! It was like walking through a tiny town that was in the midst of a burgeoning county that happened to be home to the capital of a state that was smack dab in the middle of flavor country. If every meal strived its whole life to be half the meal that this one was, I'd die a happy man.

Now I should point out that I'm quite partial to steak. In fact, you could serve me a meal that has all of the food I despise (brussel sprouts for example) and if you had a steak with it I wouldn't be able to find a reason to complain.

I should also point out that my kids let me eat this one alone so I got to watch college football highlights while I ate. That may or may not have colored my experience. (My wife had made plans before this challenge so I ate alone).

Now I don't want anyone at home to get the wrong idea. I LOVE having dinner with my family. It's one of the highlights of my day. It's also one of the reasons I enjoy the morning shift, I get to eat with them every night. But today we went hiking. We did the Hawaii Loa Ridge hike. We didn't quite get to the summit; we got to about the top of the hill before you go back down and then take on the summit. You know the spot just before the ropes (if you've done the hike you know what I'm talking about). Needless to say, I was exhausted and didn't have the energy to discuss the pros and cons of eating tonight's meal with my kids.

Normally they eat steak and tortilla, so this is kid friendly, but if it doesn't look like cotton candy (or some other sweet) or isn't served by a monkey in a tuxedo (yes there are restaurants and bars that have stuff like that I call them GREAT restaurants - even if the food is bad) they usually put up some sort of a fight. They ended up eating cereal and fruit that we had already had in our pantry. The fact that they didn't eat tonight also has an added bonus (if any of my high school English teachers are reading this note the foreshadowing).

Ingredients:

  • 1 lb. Angus beef top sirloin steak
  • 1 green bell pepper
  • 2/3 red bell pepper (already in fridge) (note: you can use more or less we just finished off the pepper from the salads we ate earlier in the week - see Thursday's meal)
  • 1 onion (already in fridge)
  • 2 flour tortillas
  • 4 spoonfuls of sour cream

You can add cheese but I just realized I forgot it, which upsets me b/c cheese is also awesome

  • I grilled the steak using Jeff's Super Duper Moon Steak Dust (named b/c it's so super its super duper and it'll send you taste buds to the moon). It's real simple:
  • 1 part paprika (already in the cupboard but you can get it on the cheap if you buy it by weight at Down to Earth)
  • 1 part pepper
  • 1 part salt (I break up this one part into equal parts regular salt, garlic salt and seasoning salt)

Grill the steak medium rare and butter it when it comes off the grill (I know this makes it unhealthier but if you're eating steak, you might as well go all out). Then cut steak into thin strips.

I cut the onion into rings and caramelized it in olive oil and butter for one hour. Cook it on low heat and remember if it starts turning brown turn it down. On a side note, I burnt my onions a little but they were still good.

Slice the peppers into thin strips and cook them in olive oil until marginally firm. I burnt these too but that's b/c I was tending to the most important part of the meal: the steak.

Throw all of the ingredients into a warm tortilla and enjoy, but don't yell at me if your mouth gets mad at you for the next few meals if they're not equally awesome. I don't have to worry about that, though. Since I had this meal all to myself, I'll have leftovers (foreshadowing reference delivered).

This meal takes about an hour to cook and only costs about $12.00 - $14.00 when all is said and done. You'll also have some leftover ingredients like tortillas and sour cream for future meals. Actually, this meal might take a little longer b/c before you eat it I recommend you take down a memo, send it to your taste buds and tell them to get ready to be wowed!
