Earth Day was first celebrated on this day back in 1970. It helps remind us to take care of the earth and it will take care of us.

Mock Chicken Tofu

Ingredients:

2-3 tablespoons olive oil
1 block firm tofu
2 tablespoons soy sauce or Bragg Liquid Aminos
1 teaspoon Spike seasoning salt
1/3 cup nutritional yeast
black pepper to taste

Procedure:

1. Drain tofu and press in paper towel to remove excess water. Set aside.
2. Heat oil in skillet on medium-high heat. Add the tofu by breaking it into bite-size pieces. Fry the tofu until golden brown on each side for 3 to 4 minutes.
3. Add the soy sauce (or Liquid Aminos) and Spike.
4. Turn off the heat and add the nutritional yeast and black pepper to taste. Stir until all the tofu is coated with yeast.
